Instructions

1. Preheat oven to 325°F.

2. In a large frying pan, cook the bacon until crisp. Remove the bacon and set aside.

3. In the same pan, sauté the onion until softened.

4. Add the broccoli and cauliflower and cook until crisp-tender, stirring occasionally.

Note: If using frozen broccoli and cauliflower, thaw completely and squeeze out excess moisture before using.

5. Crumble the bacon and return it to the pan with the vegetables. Stir to combine.

6. Spread the bacon and vegetable mixture evenly into the pie crust.

7. In a bowl, whisk together the eggs, heavy cream, Swiss cheese, salt, pepper, cayenne pepper, and spicy brown mustard.

8. Pour the egg mixture evenly over the filling in the pie crust.

9. Bake 45 to 50 minutes, or until knife inserted in center comes out clean.

Note: To help prevent the crust edges from over-browning, use a pie crust shield (like these silicone ones) or loosely cover the edges with aluminum foil during the first 20 minutes or so of baking.

10. Let stand 10 minutes before serving.

Notes/Variations

Notes:

It’s versatile! Swap in your favorite veggies, cheeses, or meats to make it your own.

Dog Commentary:

Leeloo says that leftover quiche is best re-heated in the oven (350F for 15 - 20 minutes) to prevent the crust from becoming soggy.
