German Red Cabbage

  • 1 tbsp avocado oil 

  • 1 medium red onion, diced 

  • 1 unpeeled red apple, diced 

  • 1 medium red cabbage (about 5–6 cups, chopped) 

  • 1/3 cup granulated sugar

  • 1/3 cup white wine vinegar 

  • 1/2 tsp salt 

  • 1/4 tsp ground black pepper

Instructions

1. In a medium pot over medium heat, add the avocado oil, diced onion, and apple. Sauté for 5–7 minutes, until softened and fragrant.


2. Add the chopped red cabbage and stir to combine.


3. Add the sugar, white wine vinegar, salt, and pepper.

Stir well, then cover.


4. Reduce heat to medium-low and simmer for 45 to 60 minutes, stirring occasionally.


5. Cook until the cabbage is tender but still has a slight bite, and the liquid has reduced to a thick, glossy consistency.


6. Taste and adjust seasoning if needed. Serve warm or cold.
