Roasted Cauliflower

2 tsp dried mint

Instructions
1. Preheat oven to 400°F.
2. In a large bowl, whisk together the olive oil, spices, salt, and pepper.
3. Dry the cauliflower well. Moisture is the enemy of crispy edges.
4. Add the cauliflower and toss until every piece is fully coated.
5. Line a sheet pan with parchment paper or aluminum foil for easier cleanup. Spread the cauliflower in a single layer and don’t crowd the pan.
If needed, use two sheet pans to avoid overcrowding. Overcrowding is one of the biggest roasted vegetable mistakes and can prevent the cauliflower from getting crispy.
6. Roast for 25 to 35 minutes, turning the cauliflower pieces halfway through.
7. Pull it when the edges are deep golden brown and slightly crispy.
