Uncle Tony's Clams Casino

This is a classic dish that features clams, typically served on the half shell, topped with bacon. This dish is flash broiled, resulting in a deliciously savory bite that showcases the briny flavor of the clams.

This recipe is good anytime, but is especially suited as an appetizer in seafood feasts during the holidays.

Instructions

1. Pour water into kettle, 1/2 “deep.  Add oregano, and a splash of olive oil.

2. Add clams and steam covered until clams open. Reserve the broth.

Large quantities of clams may need to be steamed in batches. Don't overcrowd the basket - the clams need room for the steam to circulate, so they cook evenly and open properly.

3. Remove one shell, leaving each clam on the half shell.

4. Place clams on cookie sheet.

5. Spoon broth into each clam shell.

6. Place one butter segment and bacon bit on each clam.

7. Cook under broiler, watching closely until bacon curls and browns slightly.
