Western Frittata

6 eggs, beaten
1 cup milk
1 tsp butter
1 tbsp cooking oil
1 cup cooked ham, chopped
¼ cup white onion, minced
¾ cup green pepper, diced
¾ cup cheddar cheese, grated

Instructions
1. Preheat the oven to 335 degrees F
2. Beat the eggs, milk, cheese, salt and pepper.
3. Add the ham, onions and peppers. Stir to mix.
4. Melt the butter in oil over medium heat, in an oven proof frying pan. Do not allow the butter to brown.
5. Pour the egg mixture into the pan. Stir with a spatula briefly to combine and distribute the mixture evenly.
6. Once the bottom of the mixture begins to solidify, work around the pan with a spatula, lifting the outer edge of the frittata, allowing some of the liquid to run beneath.
7. Sauté the mixture over medium heat 2-3 minutes to form a thin skin on the bottom. Do not allow to brown.
8. Transfer the frittata to the oven.
9. Bake for 20-25 minutes, until the eggs are puffed and appear cooked, and the center of the frittata is firm.
